Everyone in a game has to be on the same local network as the host: the same WiFi, or the host's own hotspot.
The best host is an Apple TV, with everybody gathered round the one big screen and their phones used only as controllers. A Mac, an iPhone or an iPad can host too.
Guests don't need to install anything. Scanning the QR code on the host's screen opens a controller in the phone's web browser.
